OPTIFAN

OptiFan is a concentrated endopeptidase enzyme that degrades specific proteins in raw materials, including haze-active proteins and gluten, which it breaks
down into peptides. It does not affect foam-forming proteins.
OptiFan releases amino acids and peptides that are beneficial for yeast nutrition during fermentation.
